I have a lot of left over roast beef from a pot roast. It is just sitting in the fridge. What do I do with it? Spice it up and put it in the freezer!
Here's how:
Pull apart the meet with a fork. Take out any pieces that are too fatty (My dog loves when I do this)
In a sauce pan, add the meat, salsa, spices (chili powder) a can of black beans...
whatever you like.
Bring to boil and simmer for approximately 15 minutes.
Serve up over nachos, in burritos, etc.
Freeze left overs!
YUM!!!!!!!
What do I do with these leftovers?
We all have leftovers...What do you do with them? Do you really want to eat the exact same thing you had the day before? Probably not! Just get a little creative, and you can create something totally new!

Roast Beef Salad
Just to tempt your taste buds! Recipe coming tomorrow for Roast Beef Salad with leftover Roast Beef (Roast Beast to my 2yo!) :)
Twice Baked Potatoes
I made a pot roast with potatoes the other day. What to do with the leftover potatoes? What about Twice Baked Potatoes...Of sorts....
What to do:
Preheat oven to 375
Grease a cookie sheet with olive oil
Place leftover potatoes on cookie sheet
smoosh them...with a potato masher or even a fork
Sprinkle salt and any other spices you might like.
Brush with Olive Oil
Bake for about 20 minutes
When they are done, they will be almost like oven fries! They are awesome!
We had them tonight with hamburgers and corn on the cob!

Southern Fried Chicken Tender Salad
I needed to make something for hubby's lunch today. I had 2 leftover Southern fried Chicken Tenders from Earth Fare (VERY yummy by the way). So, I made Chicken Salad. Here's How:
Ingredients:
Leftover Chicken Tenders*
One boiled egg
2 Tbs mayo
1/4 tsp celery seed
2 tsp dill pickle relish
1 Tbs honey mustard dressing
Pepper to taste
Chop Chicken tender into small pieces
Chop boiled egg into small pieces
Add all ingredients, mix well
Enjoy with crackers or as a sandwich
*Of course, if you have more left over tenders, you will need more ingredients. So, you may have to play with the amount.
The spices and fried batter make this have a great taste!
